There’s something comforting about eating breakfast from a bowl, with a spoon, hence my love of protein porridge in winter. But for something lighter and more refreshing (and absolutely amazing in terms of packing in the nutrients), this is really delicious, and can be made the night before, so great for work days.
Serves 1
INGREDIENTS
120g, organic blueberries
50ml coconut milk
1/2 tsp. vanilla extract
¼ tsp. cinnamon
20g chia seeds
15g desiccated coconut
METHOD
In a blender, blend half blueberries with the coconut milk.
Put the vanilla, cinnamon and chia seeds to a bowl.
Pour in the blueberry mixture and give it a stir.
Leave to soak for half an hour or overnight.
Before serving, add the remaining berries & coconut and give it a final stir.
