High Fibre Prune Loaf

 


Serves 12-14

 

INGREDIENTS

250g Prunes, chopped

300g Protein Pow Pea Cooking Mix

1 ½ tsp. bicarbonate of soda

50g Coconut oil, melted

2 eggs

150g honey

¼ tsp. ground cinnamon

 

METHOD

Preheat the oven to 180˚c
Grease and line a 2 lb loaf tin

Melt the coconut oil with the honey in a large bowl, either over a pan or water or gently in the microwave

Add the chopped prunes, Pow Pea Mix, cinnamon, and bicarbonate of soda to the honey and oil

Pour over 300ml boiling water and give everything a good stir

Whisk the eggs then stir this into the loaf mix, it will be much more stiff than most cake batters but that’s fine!

Spoon the mix into the prepared loaf tin and bake for 30-35 minutes or until a knife comes out clean.
