These lemon, matcha and coconut energy balls are great when you need a lift, a little snack, or fancy something sweet without resorting to junk food.

 

We all love a sweet treat once in a while, and these bliss balls will satisfy your cravings without the guilt.

 


This recipe uses lots of store cupboard ingredients, so it’s cost effective as well as delicious. It’s easy to make too, and there’s no cooking involved. These bliss balls also happen to be all natural, there are no artificial ingredients in the recipe.

This recipe uses matcha which is packed full of health-boosting antioxidants. The EGCG found in matcha is incredible for boosting energy, promoting weight loss, protecting your heart and reducing inflammation. The turmeric has strong anti-inflammatory properties and the lemon and ginger give blend perfectly with the earthy turmeric and vibrant matcha. Lemon, Matcha & Coconut Balls

Makes 20 bliss balls

Ingredients

  • 5 teaspoons Zen Green Tea Matcha
  • 5 teaspoons Turmeric powder
  • 1 cup almond meal
  • 1/2 cup desiccated coconut
  • 1/2 cup coconut flour
  • 1 cup dried dates, chopped into very small pieces
  • 3 tablespoons rice malt syrup
  • 1 tablespoon honey
  • 1 ½ lemons – use the zest and juice
  • 1 ½ teaspoons grated fresh ginger

Optional: Add protein powder, if you do this simply add a little more of the wet ingredients to correct the consistency.

 

Method

 

  1. Mix all the dry ingredients together in a large bowl.
  2. Add the wet ingredients to the bowl, mixing everything together.
  3. Take tablespoon-sized portions and roll the mixture in your hands to create small spheres.
  4. Cover each ball generously in desiccated coconut.
  5. Enjoy with a cup of matcha green tea, or golden turmeric latte!

 

HINT: If the mixture is too dry at step two, add more lemon juice until you have your desired texture.
