Peanut Butter & Jam Protein Pow Mini Loaf

My favourite ‘naughty’ combination made healthy, in a perfectly sized mini loaf for one. Feel free to increase the quantities to make more, or make a larger loaf (cooking time will need to be increased).

Peanut Butter & Jam Protein Pow Mini Loaf

INGREDIENTS

  • 30g Protein Pow Whey cooking mix
  • 15g peanut butter
  • 2 egg whites (or 4 tbsp liquid egg whites)
  • 1/4 tsp bicarbonate of soda
  • Pinch of stevia (optional)
  • 1 large strawberry
  • Coconut oil for greasing the tin

METHOD

Mix all the ingredients except the strawberry together.

Grease a mini loaf tin with coconut oil and spoon in half the mixture.

Slice the strawberry into quarters and place along the middle of the loaf before topping with the remaining batter.

Bake for 20 minutes at 180c or until risen, firm and golden.
