Serves 1 (makes 4 small)
Literally two ingredients (feel free to add more for variety if you like, but just eggs and a banana will do – the banana is even sweet enough that you won’t need any extra sweetness.)
In the ‘foodie’ world people over complicate recipes, forgetting that sometimes the simplest ideas work best.
And for busy Mums like you and I, this is the kind of healthy pancake that doesn’t leave you going ‘yeah right……’ hoping that maybe you might get time on, say, a Bank Holiday Sunday.
INGREDIENTS
1 banana, mashed
2 eggs
Optional – baking powder, cinnamon, stevia, vanilla, coconut oil to oil the pan if not using a non-stick pan.
METHOD
Blend the banana well so no there are no lumps, in food processor if you like.
Whisk the eggs and mix well with the banana, adding any extra you are using.
Grease the pan with coconut oil (if using) and ladle spoonful’s of the mixture into the hot pan.
Turn down the heat and allow to cook through, flipping half way through.
Serve with your favourite healthy toppings.
