You’ve heard of cauliflower rice, cauliflower mash and cauliflower pizza crust, and now it’s time for the 2 Ingredients Cauliflower Easy Pudding!

 

This pudding is so easy to make you’ll probably find it a regular ‘indulgence’ if you can call it that.

 


I quite like cooking, from a creative point of view, but as a Mum of two young girls I just don’t have time to follow actual recipes a lot of the time. Most of our meals are more a case of ‘heating up’; baked salmon fillets, fried mince & onions with veg, eggs every way imaginable.

Because of course cauliflower contains lots of fibre and vitamins as well as being low calorie – perfect for people wanting to lose weight and/or eat healthier.

One of the reasons cauliflower is so versatile is because it’s flavour is very mild, meaning it takes on the flavour of whatever you put with it. That’s why you can use it in both savoury and sweet recipes.

It’s also a great way to sneak more vegetables in – this entire pudding counts as 2 of your 5-a-day!

Caveat – I disagree with the 5-a-day mantra. I think most people would benefit from way more than this. I personally eat around 7-9 portions, including a couple of pieces of fruit.

 

 

2 Ingredient Cauliflower Pudding

Serves 1

 

INGREDIENTS

200g cauliflower, cut into florets

25g your favourite protein powder (Get 5% off with code POLLYH05)

Optional extras:

1 tsp xanthan gum (to thicken / bind)

Extra stevia for sweetness

½ tsp Vanilla extract

1 heaped tsp. Cocoa powder

 

METHOD

Steam the cauliflower until very soft

Place the cooked cauliflower, protein powder (I used Vanilla Sun Warrior), and any additional ingredients in a blender

Blend to a puree

Can be eaten warm, but personally I prefer it chilled in the fridge
