This is actually healthy enough to be an extravagant breakfast, but you wouldn’t know it to taste. Chocolate is the ultimate feel good food at that’s a fact – it actually increases ‘happy’ chemicals serotonin and dopamine in the brain. You also get healthy fats, protein and some antioxidants in the fruit here too. Don’t worry if you’ve not used chia seeds before and you think they look a little lumpy/crunchy, they soften to a gelly-pudding with enough time soaking in liquid.
Strawberries & Cream Chocolate Chia Pudding
Serves 2
INGREDIENTS
STRAWBERRY CREAM
50g fresh strawberries, plus 4 more to decorate
50ml coconut milk
125g Greek yoghurt
15g strawberry or vanilla whey protein powder
15g coconut flour
15g chia seeds (either whole or ground)
CHOCOLATE LAYER
50g dark chocolate
100ml coconut milk
2 tsp coconut oil
DIRECTIONS
Blend all the Strawberry Cream ingredients together then allow to sit for 10-15 minutes in the fridge before dividing between 2 serving glasses.
Heat the chocolate layer ingredients slowly in a bowl over a pan of hot water, stirring occasionally, then allow to cool to room temperature.
Top each glass of strawberry pudding with some of the chocolate mixture and a couple of extra strawberries.
